Our Weekly Menu Plan… All From The Freezer!
This is going to be a phenomenal week! I’m putting the last touches on the baby’s room, we have a BBQ to look forward to this weekend with friends and family, my family is coming down to visit next weekend, and it’s finally Fall!
This week’s menu plan comes entirely from our freezer stockpile (with the exception of the left over salad from the BBQ on Sunday night). Almost all of the recipes can be found in Not Your Mother’s Freezer Cookbook (found on Amazon.com) and have revolutionized the way we eat. I thaw everything the night before and meal prep takes almost no effort now. I’m left with a clean kitchen, a happy family and tons of extra time to pursue other interests (like fixing the 500 dead links that moving the blog to my own domain caused…*yay*).

Our weekly cost for meals is about $80, and you can’t beat how easy the week nights are now. I have to warn you that I’m in my second trimester of pregnancy with our second child and I have extremely strong aversions to chicken, meatballs, black beans, oatmeal and apple juice. I have mild aversions to pork and turkey. I can’t eat seafood. Feeding myself is a challenge right now, but I’m doing the best that I can. Fingers crossed that all of these aversions go away as soon as our little girl arrives.

Breakfast: Banana Bread with Cream Cheese, Bananas
Lunch: Beef and Bean Burritos, Corn
Dinner: Lasagna Bolognese, Salad, Garlic Bread
Tuesday
Breakfast: Whole Wheat Cinnamon Buns, Blueberries
Lunch: Zesty Italian Melts, Fruit Smoothies
Dinner: Beef Enchiladas, Applesauce
Wednesday
Breakfast: Sausage, Egg and Cheese Muffins
Lunch: Chili, Cornbread, and Pears
Dinner:Ham and Swiss Potato Gratin, Steamed Carrot Coins
Thursday
Breakfast: Oatmeal Chocolate Chip Pancakes
Lunch: Hamburgers, French Fries, Peas
Dinner: Pepperoni Pizza, Vegetable Medley
Friday
Breakfast: English Muffin, Strawberry Smash, Fruit Smoothie
Lunch: Cheese Quesadilla, Pinto Beans, Mixed Vegetables
Dinner: Spinach Manicotti, Glazed Carrots
