Strawberry Chicken Avocado Salad

This amazing salad will knock your socks off!
  • Dressing
  • 2 tsp poppy seeds
  • 1 Tbsp lemon juice
  • ⅓ cup honey
  • ⅓ cup balsamic vinegar
  • ⅓ cup olive oil
  • Salad
  • 5.5 oz mixed greens
  • 3 cups shredded rotisserie chicken
  • 1 cup chopped walnuts
  • 1 lb strawberries - tops removed & quartered
  • 1 avocado - peeled, pit removed, & sliced
  1. Dressing
  2. In a pint-sized mason jar*, combine all dressing ingredients (olive oil, vinegar, honey, lemon juice, and poppy seeds).
  3. Seal jar tightly with lid and shake vigorously. Set aside.
  4. (*If you do not have a mason jar, you can combine the ingredients in any container with a good seal, or combine the ingredients in a medium-size bowl and whisk vigorously to combine).
  5. Salad
  6. In a large salad bowl, combine mixed greens, rotisserie chicken, walnuts, strawberries, and avocado.
  7. Toss with tongs or large forks/spoons until well-combined.
  8. Evenly distribute salad into 4-6 salad bowls and serve with dressing on the side. Be sure to shake dressing well before pouring over salad, as the ingredients will settle and the poppy seeds tend to float to the top.
