Super Easy Pumpkin Spice Cookies

Bring on the fall flavors and cozy scarfs and boots! These delicious creamy Pumpkin Spice Cookies are perfect when paired with a pumpkin spice latte.
Ingredients
  • 2½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup butter (soften for 30 minutes at room temperature first)
  • 1½ cups sugar
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract

  • ½ cup softened butter
  • ½ cup softened cream cheese
  • 2-3 cups powdered sugar (2 ½ cups was about the right sweetness for my taste).
  • 1 tsp. vanilla extract
Instructions
  1. Preheat your oven to 350 degrees.
  2. Combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a bowl.
  3. In your mixer, cream the butter and white sugar together in a separate bowl. .
  4. Add egg, pumpkin, and vanilla to butter mixture, and beat until creamy.
  5. Add dry ingredients to the mixing bowl gradually and beat until combined well.
  6. Drop on cookie sheet by rounded tablespoonfuls.
  7. Bake for 15 to 20 minutes (check at 15 minutes and look for firmer tops).
  8. In another bowl, cream butter and cream cheese together in mixer. Slowly add in the powdered sugar and mix together until thick and creamy. Then add vanilla to make the frosting.
  9. When cookies are fully cooled, spread the frosting on top and eat.
